About the Role

As our Food & Beverage Manager, you are the operational engine, taste-maker, and leadership energy of Hobo Copenhagen's social spaces. This role goes far beyond traditional restaurant management. You will formally oversee all of our operative F&B departments, shaping how Hobo tastes, feels, and satisfies our guests.

One day you're fine-tuning a fast-paced weekend lunch service or managing cost forecasting, the next you're collaborating with our House Creator on a pop-up kitchen takeover or coordinating with external partners to elevate our nightlife scene. You are both strategic and hands-on, equally comfortable managing the business backend as you are being a warm, visible role model on the floor for your staff and guests.

You are an excellent communicator who is already leading a high-volume F&B operation today with proven, successful results in finance, staff retention, and guest satisfaction. To succeed in this role, you must bring wholehearted engagement, an eye for detail, and high levels of quality control. You are positive, flexible, and have the unique ability to make your staff grow through a supportive feedback culture. Working tightly with the rest of the hotel departments, you will play a critical role in shaping Hobo's unique market position.

What You'll Do

  • Manage the daily operations of all F&B departments: the restaurant, bars, café, kitchen, meetings, events and dishwashing.

  • Take full leadership responsibility for your department leads and functions, including recruitment, training, and continuous employee development.

  • Full financial and budget responsibility for the F&B departments, actively working on forecasting, procurement and cost control.

  • Ensure a world-class level of service and quality across all outlets.

  • Collaborate closely with the House Creator to smoothly execute culinary activations, collaborations, and pop-up events.

  • Manage scheduling and time reporting for your departments, ensuring the right tools and staff are in place to reach targets.

  • Monitor and follow up on guest and staff satisfaction metrics, implementing routines and policies to optimize the workplace.

Desired Qualifications

  • Proven, solid experience as an F&B Manager or senior leader within a similar lifestyle, restaurant, or hotel operation.

  • Deep, well-rounded competence and genuine passion for the modern food, beverage, and hospitality industry.

  • Strong understanding of commercial thinking, finances and cost control.

  • Exceptional leadership skills with a proven track record of growing teams, fostering a positive feedback culture, and driving high employee satisfaction.

  • Fluent in English or a Scandinavian language, written and spoken.

  • Strong organizational skills to handle everything from vendor contract negotiations to daily scheduling and administration.

Bonus if you

  • Have an established, deeply rooted network within the Copenhagen restaurant, bar, and culinary scene.

  • Have experience managing multi-concept spaces where food, drink, and live cultural events seamlessly overlap.

Employment Type

This position is a full-time position, part of the hotel's management team and reporting to the General Manager, Jakob Gjærum. Flexibility in scheduling is required, including availability for evenings and weekends depending on the activity.

Start date: October 1st 2026, or earlier if suitable.
